Hello blog peeps. Today I am just bringing you a quick post about some amazing mini apple pies that I made for a work event last week. I have to say I am amazed at how well these turned out. I have made pie pops in the past but never managed to make mini pies. I do however think this will become a repeated thing when pie is needed. (Which lets be honest when is pie not needed!)

Mini Apple Pies:

Ingredients:
6 apples
2 refrigerated pie crusts
1 cup of sugar
cinnamon
2Tbsp flour (I used whole wheat)
2 Tbsp butter
1 whole egg

Directions:
1.Preheat your oven to 425. Peel, cut, and core your apples. Make sure they are in small chunks.


2. In a large bowl mix apples, sugar, flour, and cinnamon. Let these sit until you are ready to fill your mini pies.

3. Now take a circular cookie cutter (or a glass like I did) and cut out your crusts. Once you have them cut out place each of them in a space on your muffin tin. (I am a bad blogger and I forgot to take pictures of this step and the next one and the one after that)

4. Fill each of your mini pies.

5. Now add a small amount of butter to each pie.

6. Here's where you can get creative. Either cut out more circles to use as tops to your pie or make a basket weave. Really with this step you can get as creative as you like.

7. Beat your egg with a small amount of water. With a pastry brush make sure to brush the tops of all the pies.

8. Bake for 18-20 minutes or until tops are golden brown and insides are bubbly.

9. Make sure to remove them from the muffin tins almost immediately. Other wise they will stick.

10. Serve warm with some vanilla ice cream.


Hope you guys enjoy making some pies. Obviously I made apple but this could work for a multitude of pies. And I mean isn't everything cuter in mini size!

Wardrobe Wednesday (Just a day late. . .)

Hi all! So I know the whole point of Wardrobe Wednesday is for it to get posted on Wednesday. Well life happened this week and I just did not get around to posting this yesterday. Anyway here is this weeks outfit du jour:



Top: Liz Claiborne (Thrifted) $2.99
Skirt: no tag (Thrifted) $1.50 
Total outfit cost: $4.49

So last week I promised a tutorial with this weeks wardrobe Wednesday and here it is. That "skirt" that I am wearing was a dress a mere hours before I wore it. When I saw this beauty at the thrift store I loved the color and the pattern but the top did not fit properly. (Judging by the lack of tag this dress is either very vintage or handmade.) So I could not pass it up and my first thought was this would make a wonderful skirt! This was possibly the fastest and easiest refashion ever. It literally took 20 minutes from start to finish. 

Thrifted Dress to Skirt Refashion


1. Decide where you want your new waistline to be. For me I wanted to keep the nice piping detail on the front so I cut about three inches above this. 

2. Cut a straight(ish) line at the point you decided.


3. Now with the skirt/dress turned inside out fold over your new waistband all the way around. 

4. Sew a straight line (with your straight stitch for cotton and zig zag stitch for knits) all the way around your new waistband. Make sure to reinforce your stitches at the beginning and end. 

5. Now because I needed a button closure at the top of my new waist band I got crafty and salvaged the  buttonhole from the dress' top and a button as well. 

6. To create this new button closure I just folded over the rough cut edges and sewed them down. 

7. Then I attached my button and my new button closures and I was set to go! Brand new skirt for $1.50

The Medicine Cabinet Shuffle

I hope everyone had a fantastic weekend! Today I just wanted to share a little organization project I did in our bathroom. Our medicine cabinet was getting out of control. Picture being attacked by stray bobby pins, ponytail holders, and the rogue hairbrush when you opened the doors. Luckily the dollar tree had the perfect solution to my medicine cabinet woes.

I picked these little containers up in a three pack for a dollar and they are just what I needed to contain the clutter. Now my hair ties, bobby pins, and the like have a holding cell and will stop wildly flying from the cabinet every time its opened. (Another plus is that I can now find all of these things with minimal thought processes.) This means I no longer have to remember the last place I saw that stack of bobby pins or hair ties. It always amazes me what a tiny update can do for a room.

Wardrobe Wednesday: I Love Maxi Skirts

So today's outfit is not thrifted. I did however refashion this maxi skirt from a maxi dress that I had a few years ago. When the maxi skirt trend came back around I was dying for a black maxi but to no avail could not find one that I like on me. Then I remembered I have a black maxi dress that is too short (picture the light bulb going off in my brain) and that is how this maxi skirt was born.

Hope everyone is having a great week (and if not well its already hump day)! My plans for today include lunch with some dear girlfriends. One of which will be moving to London soon with her hubby. Can we say jealous much! I hope you guys enjoy today's outfit and as always I love to hear what you guys think!

Gonzalez Family Washington State Vacation

So if you saw my Wardrobe Wednesday post last week then you probably wondered where that was taken (if you have ever been to Charleston, SC then you know it wasn't here). Well Jose and I had a little vacation to Washington state and let me tell you right now I am in LOVE! It was so beautiful and I could have stayed forever. Also I must mention that the weather was perfect. No rain and it was 75 most days we were there. But enough of my yammering here are a few lot of pictures to give you an idea of how awesome it was.
